One of the most ancient legumes of our zones,
basic nourishment of the local populations, then forgot with the
entrance of new food habits. Lately, it has been a great re-discovery.
The cultivated sort is an ecotype of central Italy, smaller then
that normally in commerce, with the common feature to all ecotypes
that have not undergone special genetic selection, that is to
say, to have some seeds of different color compared to the dominating
color (feature that it is utmost found in the lentil of Castelluccio).
Very tasty and extremely easy to cook.
